Cheese curds are an annual State Fair favorite for many Minnesotans. Dave Cavalaro runs the Mouth Trap Cheese Curd booth in the food building. He explains why State Fair curds stand apart from all the others…

“Well we’d like to think that we have a special process first of all we bring the cheese curds in from Ellsworth Creamery we bring them in every night so they’re fresh first thing in the morning and the other thing is we use a cold batter and we use fresh oil and we clean the fryers nightly.”

Believe it or not, Cavalaro says only about one in four customers use ketchup with their curds.
